Homemade Marshmallows

I like winter. Sometimes.
On some days when I sit on the sofa with a hot cocoa and watch the dancing snowflakes,
on these days I like winter. Always!
Hot cocoa tastes especially delicious with marshmallows.
The ones you buy look nice and taste pretty good, but I'm still interested to see if the ones you make yourself look nicer and taste even better.
You would think so.
And so today I am faced with a great challenge.
I want to use these cookie cutters...

...make homemade marshmallows.

For this I need:

* 400 g sugar
* 125 g icing sugar
* 2 egg whites
* tbsp light syrup
* 4 tbsp ground gelatine (I use leaves)
* 300 ml water
* 1 tsp vanilla extract
Dust a 23 cm cake tin with icing sugar.
Mix sugar, 175 ml water and light syrup.
Heat the mixture to 120 to 130° C or until a drop of the mixture in cold water forms a hard ball.
Pour remaining water into a metal bowl and sprinkle gelatine over it.
Heat in a water bath until the gelatine has dissolved.
Remove the syrup from the heat and stir into the gelatin mixture.
Beat 2 egg whites until semi-stiff. Pour in the syrup while stirring constantly.
Beat until very stiff.
Add vanilla.
Pour evenly into prepared mold.
Allow to set overnight.
Then cut into pieces.
Or cut them out with pretty cookie cutters.

According to the video everything is very easy.

I'm going to get to work now and hope for lots of dancing snowflakes.
