Wonderful things from Miss Klein
Posted by Wohnreich on
Every morning Leila Lindholm smiles at me kindly.
Now Miss Klein joins her - and I smile happily back.
This book is a masterpiece of recipes, photographs and decoration ideas.
In keeping with Valentine's Day, I have picked out a little culinary sensation from Fräulein Klein and would like to introduce it to you here:
Coconut panna cotta with spiced blood oranges
You need:
250 ml coconut milk (creamy and unsweetened)
250 gr. cream
50 g sugar
4 sheets of gelatine
1/2 tsp tonka bean zest
2 cardamom pods (crushed)
3 blood oranges
3 tablespoons sugar
1 vanilla pod
1 tbsp Cointreau
You do:
* Soak gelatine in cold water.
* Put coconut milk, cream, sugar, grated tonka beans and cardamom pods in a pot and bring to the boil.
You take:
* Remove everything from the heat, remove the cardamom pods and let the squeezed gelatine dissolve in it.
Allow to cool slightly and pour into four glasses.

And then please leave to cool (preferably overnight).
Let's continue:
* Fillet the blood oranges. Collect the juice and squeeze out the remaining juice.
* Put everything in a small saucepan.
* Bring to the boil with sugar, vanilla pulp and Cointreau.
Simmer for about 2 minutes and allow to cool.
Pour over the panna cotta
and
the masterpiece is complete!
By the way, Fräulein Klein also writes her own wonderful blog .
Her book "Wonderful Things from Fräulein Klein" is now available through the Wohnreich Shop

Have a happy Sunday,
with at least one culinary delight.
