Lucia Festival

Today the Swedes celebrate the feast of Saint Lucia.
On December 13th, the girls wear white robes and burning candles.
The eldest daughter dresses up as “Lucia”.
She wears a red bow around her stomach over her white dress. She balances a wreath with burning candles on her head.
Saint Lucia, so the story goes, helped poor, needy people. She provided them with food.

Today, at the Lucia Festival, people eat "Lussekatter", a traditional saffron pastry. Lucia songs are sung and a local Lucia is chosen.
A Lussekatter tastes delicious and is quick and easy to prepare:
50g butter
5 dl lukewarm milk
30 g yeast
300 g flour
1 tsp salt
50 g sugar
1 egg
1 pinch of saffron
1 egg yolk
Raisins
Mix the butter in the lukewarm milk. Dissolve the yeast in it. Add the remaining ingredients and knead into a smooth dough. Let the dough rest and rise until it doubles in size. Divide the dough into 24 pieces and form Lussekatter. Brush with egg yolk and bake at 250° for 15 minutes.
Form Lussekatter: cross two inverted "S"s, twist the ends and decorate with raisins.
